Effects of Oil Phase on the Inversion of Pickering Emulsions Stabilized by Palmitic Acid Decorated Silica Nanoparticles

Pickering emulsions stabilized by the interaction of palmitic acid (PA) and silica nanoparticles (SiNPs) at water/oil interface have been studied using different alkane oil phases. The SiNPs has a strong synergistic character in relation to emulsion stabilization, leading an enhanced stability that only fatty acid. This results from formation acid-nanoparticle complexes driven hydrogen bond interactions, which favor particle attachment fluid interface, creating rigid armor minimizes droplet coalescence. comparison obtained alkanes as phase shown hydrophobic mismatch between length chain C16 PA determines nature emulsions, with solubility being very important driving force governing appearance inversion.
